Kulfi

Kulfi or Qulfi is a popular flavored frozen dessert made from milk which originated in South Asia. Ingredients and flavor changes region to region based on the culture and taste. In hot and semi-dry climate like Ahmedabad, India it gets popular during summer evenings.

Unlike other ice cream, kulfi takes a very long time to melt. It comes in various flavours, including pistachio, malai, rose, mango, cardamom (elaichi), saffron (kesar) or Zafran, the more traditional flavours, as well as newer variations like apple, orange, peanut, and avocado. Generally it poured in various forms (cylindrical, cone) with wooden stick and served with stick. It is very popular amongst the young.

Unlike Western ice creams, kulfi is not whipped, resulting in a solid, dense frozen dessert similar to traditional custard based ice-cream. Thus, it is usually considered a distinct category of frozen dairy-based dessert.

16 oz Sweeten Condensed Milk

500 ml Milk

½ Cup Sugar

2 tspn Corn Starch

1 tspn Pistachios (grated)

1 tspn Almond (grated)

1 tspn Cardamom (grated)

Boil it another 15 min and stir it well constantly. Then take one half cup milk from this liquid mixture and add corn starch and mix it very well and then pour it in to the main liquid mixture. Let it keep aside to cool it and then pour in to the Kulfi mould or air tight container. And then keep it in deep freezer for 8 to 9 hours.
